Direct and alternating current electric fields affect pectin esterase and cellulase in tomato (Solanum lycopersicum L.) fruit during storage

Abstract

This study aims to investigate the impact of direct and alternating current electric field (DCEF and ACEF) on quality variety tomatoes (Solanum lycopersicum L.), exploring the mechanism through the pectin esterase, polygalacturonase, cellulase, antioxidative system, oxidative damage, respiration, and ethylene variety. The results shows that the ACEF90 and ACEF120 have reduced weight loss, browning, ascorbic acid loss, and quality deterioration in post-harvest tomatoes during storage. Whereas the ACEF 30, ACEF60, and DCEF120 present relatively limited efficiency to prolong the loss of tomato quality. Furthermore, ACEF and DCEF treated alleviative the decomposition of enzymes, tissue integrity, respiratory, and ethylene synthesis, and simulate the antioxidant system response in tomatoes. This research indicated that alternating current and specific treatment times of electric field treatment (90 min and 120 min) show more significant efficiency in prolonging the shelf-life of tomatoes by declining tissue degradation, oxidative damage, and simulating the antioxidative system. © 2023 Elsevier B.V.
