Abstract

The abundance of agricultural waste such as fruit peels, vegetable waste and egg shells has the opportunity to be processed into valuable products such as enzymes and biomaterials. The shift in industrial processes towards a more environmentally friendly direction has gradually given rise to the need for enzymes as reaction biocatalysts. This research aims to study the potential of egg shell waste as a support material for immobilizing crude enzymes produced from fermentation of dragon fruit peels, orange peels, avocado peels and vegetable waste, namely water spinach rootstock. The research was carried out on a laboratory scale. The experimental method is divided into several stages, namely: synthesis of crude enzyme from fruit and vegetable waste, purification of enzyme by concentration, synthesis of eggshell-based material, and the final stage is immobilization of crude enzyme into the material. The results of this study indicate that egg shell membrane (MCT) and processed egg shell into hydroxyapatite (HA) material have the potential to be materials for immobilizing crude enzyme respectively: 33.05 ± 3.62 U.mL-1 and 46.73 ± 0.27 U.mL-1 for MCT and HA. These results indicate that HA material has more potential than MCT for use as enzyme immobilization. HA material from egg shells which is able to immobilize crude enzymes provides an illustration of the benefits of waste into products that can be used to develop processes in industries that are environmentally conscious. © 2024, Panji Sakti University.
